Life is short. Butter is expensive. We might as well make something beautiful with it.
French technique, Toronto soul, and very good ingredients.
Small-batch pastries, made from scratch with local and organic ingredients. No preservatives. No artificial colours. No artificial flavours.
Our menu changes every week, so there's always something new in the clouds.
Meet this week's pastries. Made from scratch, baked in small batches, and available for a very limited time.
We bake to order, in small batches, with a new menu each week and limited quantities. Everything is made fresh to order.
Monday 11 AM to Wednesday 11:59 PM. The menu changes every week, what you see is what's baking.
Saturday, 11 AM – 3 PM
Every Saturday, Nuage lands somewhere delicious in Toronto. We pop up at a different farmers' market each week, and the location is announced Monday at 11 AM. Order ahead, come say hi, and pick up your pastries fresh from the market. Not making it to the market? Downtown pickup is also available around Richmond & Peter.
Choose a format, then fill it exactly the way you want it.
Good desserts start long before the first bite. We select our ingredients the same way we bake with them: with total intention. We care about where they come from, who grows them, and what they stand for.
Whenever we can, we buy local. And when we have to look further, because cocoa or vanilla don't exactly thrive in an Ontario winter, we simply source the best we can find.

We use organic, grass-fed butter, pastured organic eggs, local Ontario dairy and two organic Canadian flours: white unbleached wheat flour and light spelt flour.

Not everything can be local. Cocoa, vanilla and sugar cane all have to travel a little further to get to us.
We care about where our ingredients come from, how they're produced, and what goes into them. Choosing local matters to us because we want to support the farmers and producers around us. Choosing organic matters because we care about the environment. And choosing eggs from hens that have room to roam and peck matters because we care about animal welfare too.
We're not trying to make every ingredient local when that doesn't make sense. We just want to make thoughtful choices, for the people who produce them, the animals involved, the environment, and of course, the pastry at the end of it all.
Pâtisserie Nuage is a Toronto business. We don't just want to operate here. We want to be part of here.
